In a time of travel restrictions and rampant fetishization of the “local”, DUÅ here in Umeå remains a bastion of a better future with delicacies from around the world, although with an obvious emphasis on Italy and Spain. Beyond chocolate and cheese, I sometimes sin and pick up a bit of pancetta to make some of Gennaro Contaldo’s lovely spaghetti carbonara which is just perfect after skiing around the lake in -8 degrees.
