Manchego risotto

Tradition dictates that early September is chanterelle risotto season but, a thousand kilometres away from Umeå, I decided to trade my signature “Västerbottenost” for Manchego cheese. Still, with both Umemilen and Höga Kusten Trail this weekend, I cannot help but missing the High North a bit.

In a week from today, I will be in Tallinn, getting ready for my mad marathon race the following day. I can already feel how I am getting increasingly germophobic and “maranoid” so I guess the coming week will be a bit of a challenge. Luckily, I have classes almost every day to keep me distracted.
