Shiitake

For thirty years, Shiitake mushroom was grown deep down in the iron ore mine in Kiruna but, given the increasing volatility of the mining operations there, the production had to stop in 2019. That however, did not stop me from making Shiitake risotto with Västerbotten cheese and pancetta now when the chantarelle season is firmly over.
